Recipe – Gourmet chickpea burgers

Serves 4-6

Ingredients

Chickpea patties

2 cups chickpeas soaked overnight
1 onion finely chopped
2" ginger finely grated
1tspn cumin seeds
1tspn coriander seeds
1tspn turmeric
½ tspn sea salt
¼ tspn hing or ajwain

Coriander pesto

Bunch of fresh coriander
Handful of soaked & peeled almonds
1tblspn ghee or extra virgin olive oil
2 cloves roasted garlic (roast with vegetables)
3tblspn lemon juice
salt to taste

Burger & Filling

Yeast Free Spelt Sourdough bread
1 Sweet potato thinly sliced & roasted
¼ Pumpkin thinly sliced & roasted

Method

  1. Roast vegetables and garlic in Ghee or Coconut Oil
  2. Boil the chickpeas with hing or ajwain and salt for 1hr or until tender and well cooked
  3. Sauté onion and ginger in ghee on low heat with cumin and coriander seeds
  4. Drain and mash chickpeas to and add to onion mix with turmeric.
  5. Make patties from the mixture and you can fry them to make sides golden (optional)
  6. Blend the pesto ingredients or use a mortar and pestle
  7. Toast the bread, spread the pesto thinly on each slice, place a pattie on and top with roast veggies. Add extra olive oil as a sauce if needed.
  8. Enjoy!
