Recipe – Gourmet chickpea burgers
Serves 4-6
Ingredients
Chickpea patties
2 cups chickpeas soaked overnight 1 onion finely chopped 2" ginger finely grated 1tspn cumin seeds 1tspn coriander seeds 1tspn turmeric ½ tspn sea salt ¼ tspn hing or ajwain
Coriander pesto
Bunch of fresh coriander Handful of soaked & peeled almonds 1tblspn ghee or extra virgin olive oil 2 cloves roasted garlic (roast with vegetables) 3tblspn lemon juice salt to taste
Burger & Filling
Yeast Free Spelt Sourdough bread 1 Sweet potato thinly sliced & roasted ¼ Pumpkin thinly sliced & roasted
Method
- Roast vegetables and garlic in Ghee or Coconut Oil
- Boil the chickpeas with hing or ajwain and salt for 1hr or until tender and well cooked
- Sauté onion and ginger in ghee on low heat with cumin and coriander seeds
- Drain and mash chickpeas to and add to onion mix with turmeric.
- Make patties from the mixture and you can fry them to make sides golden (optional)
- Blend the pesto ingredients or use a mortar and pestle
- Toast the bread, spread the pesto thinly on each slice, place a pattie on and top with roast veggies. Add extra olive oil as a sauce if needed.
